By placing the blackbird in the center of the pie it prevents the pie filling from boiling up and leaking through the crust by allowing steam to escape from inside the pie. Pie funnels are sometimes called vents, whistles, chimneys, or birds. A wonderful item for the pie funnel collector or cook.
