Born in Nancy, Couillard received first studied under Philippe Steinmetz at the École des Beaux-Arts de Nancy, where he was a contemporary of Camille Hilaire and Claude Weisbuch. Couillard subsequently continued his studies in Paris at the Atelier Jandon.

Couillard exhibited with success in France including, from 1946, at the Salon des Artistes Lorrains and at the Galerie Mosser (Nancy). In 1950, Couillard settled in Paris and, in 1953, began a career as an art teacher which enabled him to maintain his artistic pursuits. Couillard traveled throughout France, drawing inspiration from the landscapes of Lorraine, Brittany, Jaunay-Clan and the Auvergne. His time in Brittany particularly influenced his work, where he became captivated by the coastal landscape and seaweed.
