The thick, sturdy walls allowed for slow and even ripening, ideal for the traditional preparation of lactic acid fermented foods. Even today, the pot is still fully functional and is excellent for fermenting all kinds of vegetables. The capacity is traditionally marked 18 in a small indentation on the rim. See less
