A monumental survivor from the Belle Époque kitchens of France. This 22-inch oval copper poissonnière was hand-forged in Villedieu-les-Poêles, Normandy — the legendary “City of Copper” — for poaching whole salmon, turbot, or pike in fragrant court-bouillon. Built for grand brasseries or château banquets, it cradled fish for 50+ guests with effortless grace.
Never retinned. Never polished. Never repaired.
The original hand-wiped tin lining (applied ~1890) remains fully intact, aged to a deep gunmetal patina from a century of wine, vinegar, and herbs. The exterior preserves razor-sharp hammer marks, micro-pitting, and factory tin flash — exactly as the coppersmith set it down. Dovetailed long seams and a forged iron bail handle (for the missing lift-out rack) confirm pre-1910 craftsmanship.
