Who says that it is impossible to regain one’s reputation? The Colony began as a restaurant for New York’s demimonde but was eventually taken up by the most fashionable, and remained in the top tier of society restaurants long after this book went to press (Jackie and Ari frequented in the months before their 1968 marriage). In addition to recipes and menus, the book covers the restaurant’s unique character and Robin Hood-like tendencies (owner Gene Cavallero would increase or decrease his patron’s total based upon his estimation of their wealth).
“The Colony is one of the few places in New York where I finish my vegetables; and more often than not, at other places I don’t even begin them.”
--Iles Brody
