In the 1940s and 1950s, interest in French cooking rose in the United States, but recipes translated in English were few and far between. Simone Beck and Louisette Bertholle worked with Julia Child, a friend they studied with at Le Cordon Bleu, to create a French cookbook that would appeal to the American market.
